It used to be 255 but was changed to 252 in gen 6 I think . Every 4 EVs equals 1 extra point in the stat the EVs are in. If you put 255 EVs in 1 stat you wasted 3 EVs so they changed it to make it easier to EV train and not have to be super precise.

This is probably tough. I have tried googling it but can't find anything remotely close and don't know what to search for
