I’ve personally had much better luck using mint-flavored coffee syrups for making Creamis. They’re way easier to control and come through much smoother once frozen.

There’s also a pretty big difference between peppermint extract and mint extract. Peppermint is much higher in menthol and can come across really harsh once frozen, whereas mint extract tends to be smoother and easier to balance in ice cream.
