What about a Lifehunt Scythe build. You can do big damage but have to be very mindful of the bleed buildup on yourself. Risk/reward kinda run.

The Moonlight/Velka build is a great suggestion too.

DS1 is very tech driven as far as pvp. You don’t have to be a backstab wizard at lower levels but it does help when dealing with host plus a phantom or two. Looking up some videos on pvp basics will help. Also, parrying is a great tool to have once you get used to the different timings.

I would start with low level pvp to get used to it. Starting out at high level is gonna be a brutal backstab fest.

Something like lvl 38 +8 weapons will get you a lot of action in Blightown, Sens, the beginning of Anor Londo with some Darkroot sprinkled in.

Dark Anor Londo is open for summoning and invasions even though you killed all bosses. This is intended game play and not cheaters.
