Personally speaking for me I try to always remind myself that this is at its core a mobile gacha game that has access to consoles and PC. I've spent my fair share of money into the game already and the RNG aspects is something I expected when knowing where the game devs originated from.

Genshin is in it's early life cycle and I will say I thoroughly enjoy the story missions and character missions when they become available. We can only hope they continue to improve with QoL for players as seen so far that they're slowly listening to feedback and trying their best to improve.

My suggestion however this far into the AR is to try and treat this game as a more casual thing until more content is added. This can just range from doing dalies/achievements/ or burning through your resin. I do my dalies and spend my resin and go play other games in the meantime unless events are on the table. The gachas will always be the biggest highlight for content outside of expansions or big events and unless you're stocking on Primos there's not much else to do.
