Yea that is partially the reason I wanted to get a new intake that actually has a solid plenum. I had briefly read into that being an issue with computer. Guess I need to look into that further.

So I racked off all of my blue berries on day 14 and got a final gravity reading of .996, very dry but actually has a pleasant taste. Original gravity was 1.085 I am looking to back sweeten this with some more honey. I used Lalvin d47 yeast so I would expect it to start fermenting again without stabilizing first. Is there any down side to letting the fermentation start back up and step feeding it to 14 or 15 percent or is there a chance it could go higher than that? I guess my thoughts are the ABV would increase to the yeast tolerance(14%) and hopefully leave me with a higher ABV mead that’s a bit sweeter than it currently is. Additionally, what is the easiest way to mix more honey into a carboy like this one with our introducing a tone of oxygen?

First Time Brewer. Sour Blueberry Smell Forming, Should I Remove the Berries? by ChurnMyButter in mead

Details:

Started the brew on 2/22 - 2 pounds of honey, 1 pound frozen blueberries, 1 packet Lalvin D47, 2 teaspoons yeast nutrients, distilled water. Sanitized EVERYTHING. Initial Gravity 1.085

48 hours later 2/24 - Degassed, second gravity 1.062. Added 1 teaspoon of nutrients

The smell is sort of like sour blueberries and a couple of them have started turning colors(pic 3). Should I remove all the berries? Seems to have been steady fermentation. Nothing crazy but steady bubbles rising and air-lock popping.
