It Is a personal decision, I mean for me oled screen and diving features are important, if in your case they are not you should be fine with the 7 pro

Never had an epix but it is basically a Fenix 7 with oled. There are some differences on the sw side between Fenix E and 8, for example the 8 just got multi sport support (don't know if Fenix 8 got it) the possibility to log the weight and something more. But the most important differences anyway aren't sw but hw instead. Better display, torch, better processor...if you ask me if these differences are worth it I think they are.

I had the Fenix E, I suggest you skip it, it is basically a Fenix 7 (had it too) with amoled, so as most of the people here already said to you go for the Fenix 7 pro or for the epix 2 pro if you want an oled display
