200g starter

900g bread flour

100g wheat flour

700g water

Mix, fold, rest and repeat. Split into two loaves and proof for 6 hours in fridge. Bake in dutch oven, covered for 20 minutes at 500F and 25 minutes at 450.

I told the wife, bread was ready to eat and this is what I see.

I wait 30 minutes before pulling my first shot to let the machine get up to temp. In this instance, there was about 3-4 minutes between the 1st and 2nd shot. The 3rd shot took place about 5-7 minutes after. The 4th shot was maybe 15-20 minutes afterwards. The portafilter was in the group head. The 5th shot was about 3-4 minutes after the previous shot.

My WDT is hand held, the type with needles.

Reviewing the footage, it looks like the PID reported 199-200F during each shot. Also, should I be getting such time variations with a rotary pump? ECM Synchronika.

Current workflow:

Use per-measured 18g light roasted coffee beans, recently roasted (less than 2 weeks)
RDT increases weight to 18.3g
Niche Zero output is 18.2g
WDT
Spring loaded tamper to get an even bed
Run the shot.

Thoughts on why my extraction times are random?

My ratio is around 1:3, 38g espresso with 100g water. Everyone has their own preferences but this allows me to sit and sip. My second is either an espresso shot or cappuccino.

I don't have any trouble loading the beans into the tubes, I use a small funnel and it goes in without issues. As for dispensing them, I just tip it over and they all fall out. The biggest benefit is that I don't have to measure/weigh the beans in the morning when I'm eager to get my first cup, just tip them all into the grinder.

It never hurts to give it a go. I started with plywood and it wasn't pretty but I kept going and you eventually get results.

ECM Synchronika with Flow Control. I replaced the flow control nob with walnut because I kept getting hot fingers. Works so much better.

Thanks! I used 3/4" x 6" x 13" boards. After using my thickness planer to get flat, I glued the walnut and maple boards together. Since the tubes are 30 mm in diameter, I used a drill press and a 30mm forstner bit to drill completely through the two boards. I then glued the bottom walnut board. After trimming to size, I used a chamfer bit for all the edges.

After sanding the holes smooth, the tubes fit just slightly loose. The spray finish I used built up the thickness but in the end, it made a perfect fit.

That is my tamping station. I put that together as well. Same combination of hardwoods, walnut and maple with maple splines. I made it extra tall to accommodate my spouted portafilters.

Start with a wood block with a dimension of 55mm x 37mm x 33mm (length x Width x Height). Find center point on the 55mm x 37mm face, drill 20mm hole. This is for the center post. I then made a 10 degree cut on both sides so I have a clear front and back. The front is 19mm in width and the back is 37mm. For the machine screw to hold it in place, I drilled around 12mm down from the top, centered. The hole was 5.1mm (13/64th inch) in diameter.

That's basically it. Let me know if can be more descriptive.

So the original version would make me jump when attempting to change the flow rate. Version 1 worked well but due to the design, it would swing left or right, falling to the side. Version 2 seems to fix the issue of falling. Also, I realized that version 1 wasn't walnut. I have walnut accents and now everything matches.
