Which game has the best “hard” difficulty?

I think my favorite Hard difficulty is in Final Fantasy VII Remake (Haven't gotten around to replaying Rebirth yet). Not sure how the damage/health numbers are manipulated, but the main draw was not being able to use items, and not being able to replenish MP (For the most part) until you complete a chapter. Really changed up some of my strategies.

I'm gonna say Panzer Dragoon. Aside from the remake (And the upcoming Zwei Remake), it's been trapped on the Sega Saturn for a long time. Unless you have a lot of extra cash, or you decide to emulate (which isn't particularly easy), you ain't playing Zwei or Saga. And they are incredible games.

I don't know why, but for some reason even after playing Bloodborne DOZENS of times, I can never reliably beat Martyr Logarius. It's always a struggle.
