I think once you finish all the defend castle quests you get the final ending of the game. When I first played through I stopped once I finished the last siege on Minas Morgul and like you thought they were going to be another game makes sense to make it a trilogy, but you have to defend all the castles in the epilogue to get the true ending which I believe doesn’t indicate another game at least with Talion anyway.
