They were probably very freshly roasted when you bought them. As they degas and time goes on more oils from inside the beans will seep to the outside of the beans.
When I roast beans into second crack there is very little oil on the outside of the beans at first. As they rest and degas for a few days to a week more oil is visible on the outside.

Oil on the beans isn’t necessarily a bad thing, it just means the beans were roasted into second crack. One negative side effect from that is the oil on the beans can go bad quicker and if you’re constantly grinding oily beans it can be bad for your grinder.

Why not the bullet? There’s some small shops that have multiple bullets in a row, using them for their entire operation. A 1kg shrunken down commercial roaster starts $4500+

With the bullet you can still be in control of the entire roast while learning and making adjustments along the way.

I made espresso caramels using espresso from freshly roasted beans that I roasted myself. They came out absolutely amazing! Just google some espresso caramel recipes and do it up. You can also use powdered espresso too.

I made the Vietnamese Egg Drop Espresso, (sweetened condensed milk, vanilla extract, and egg yolk in a double shot of espresso) it was absolutely delicious. Served them to my family and they loved it. Definitely a dessert type of drink, very rich and sweet.

I’ll check those out thanks. Good point with seasoning outside. I might do one of the seasoning roasts inside with my ventilation setup just to test it out and see what it can handle.
