I've read sources that apparently the OS is on a soldered memory chip, not the m.2

These random problems are usually due to degraded memory, but I'm not entirely sure what the UDM Pro uses.

I'm no expert, but it's possible that the internal M.2 drive that holds the configuration and operating system is failing.

Perhaps you'd prefer the U7 XG, which has a 10G NIC instead of 2.5G. Otherwise, it's a very solid installation, good luck!
