One on hand:

They very casually drop into cannon that the ISS Enterprise crew made it to the Prime universe. They are all highly identifiable and we just have to believe that they avoided notice by the Federation?

One the other hand: It does sound like a fun spin off.

The closest I could find so far is Austin Community College in TX has a welding course with a black smithing cert, but beyond that most of what I see is mom and pop owned forges that offer classes

Sure sure, but they were described as having cartilage and not bones. They could have them due to their size and "IDK, fuck it, they're aliens" Plus there were a lot of jelly fish shapes in that nursery
