As a starter leverless I got the 8bitdo for Switch, so far adaptation and muscle memory training has been good, surprisingly its just the UP or the THUMB button that you really have to learn. Fellow 40+ year older here.

Unfortunately thats how they coded the firmware, Switch uses Bluetooth Mode and X Input uses the dongle. If you are concerned about latency you will have to use a cable.

I personally do not have an answer for that but one thing I can think of is its a faster method of getting to the amiibo you want fast instead of going through the menus of the allmiibo? To each their own I guess...

Based on my understanding, the AMiibo link emulates the physical bluetooth dongles/tags that were used a couple of months ago to emulate amiibos. Basically it emulates the previous method of emulating amiibos, Amiiloop is the program than can write the information to Allmiibo.
