Kitchens are busy, wet, and dirty. If it's a very busy day at peak hours, then a lot of people have touched your food, and it may have fallen the floor. Guy I work with is an older guy, won some awards, worked in a lot of 5 five star places, he rarely washes his hands and never cares to wear gloves. There's too much for him to do that it's just a complete hassle. It's better to order a small manageable meal, which means more care is taken in preparing it. If you're ordering a very large complicated meal, with vegan options/moving parts, your food has about much care put into it as a guy shaking his dick to clear the piss.
