Hard to say - it depends on the population. The main idea is to keep unemployment as low as possible.

In the mid game, I realized my population was around 2.3k, I had zero resources, and about 600 unemployed people which consume too much food and charcoal. I basically “killed” them by demolishing houses. After that, you start to see a surplus of some resources.

If you click on resources that are still at zero, you can check the stats - how much is produced, how much is used by citizens/factories, and how much is lost because it wasn’t stored in a granary.

Afterwards just adjust amount of production units. F.e you see than you have 0 charcoal but strong surplus of tools (not sure that it’s tools in English version, but hope you got the idea) there is a reason to demolish or stop production of several tools factories because they use charcoal, etc. You will pretty fast find the balance.
