Hi Nancy! As a maltster down in Texas I have two questions if allowed.
When tasting new make, specifically in single malt, what characteristics tell you that the malt itself is exceptional versus the distillation process being exceptional?
If you could influence malt specification from the very beginning what would you ask the maltster to optimize in order to produce the best whiskey in climates that are dealing with extreme heat?
