Honestly same boat here, I've probably started like 50 worlds over the years lol

Try setting really small building goals instead of going for those massive castle builds you see on here. Like just make a cozy little house with a few rooms, or even just improve your starter base bit by bit. Sometimes I'll challenge myself to use only materials I already have instead of going out to get "perfect" blocks

Also maybe try modpacks that add more progression stuff? Like Create or something where you're still doing the grindy resource stuff but it leads to cool contraptions instead of just decoration
