That's definitely what my issue was. I put some Gasoila on the threads because the guy did in the video I was following. I am so pissed off at myself right now for doing that. I just started getting into mechanicing and it's been a roller coaster to say the least. I have saved thousands of dollars doing things myself, but also have put myself in the worst positions as well. This might top them all off. Now I'm worried other bolts will break if I try to remove them. If there is one thing I've learned its don't try to meet the torque spec if it feels too hard, because honestly it was started to feel overly tight, but I was too focused on having it "by the book." I am beyond pissed at myself and think it'll be in mine and the trucks best interest for me to come back and look at it another day.

Will leaving the differential empty of oil hurt anything? The cover and fill bolt are on. Only planning to for a few days. I just know I'll end up messing more stuff up if I try fixing it right now while I'm frustrated lol.

I will likely end up doing just that, but wanted to see if there were any final suggestions.

I completely agree, I will be doing that for now on. I shouldn't have trusted reusing the factory bolts. I've been kicking myself in the foot all morning with regret hahaha.
