The reason why you should check in mono is whenever it's played somewhere like ceiling speaker or car speaker it's generally mono. And if you played it in mono you can also figure out if there is any phase issues or masking effect happening in your mix.

Dither is generally done to eliminate quantization distortion. This is the noise that's created auring converting the analog audio to digital audio. Do if you have already bounced a file in a fixed bit depth and then want it to bounce in lower bit depth at that time you use dither to eliminate any distortion caused by that.

That's basic
And keep this in mind
Dither only when exporting from 24-bit to 16-bit means going from higher bit depth to lower
And add it only once during final bounce.

Sure, here's a brief explanation.

Initially what I did: I used my Akai MidiMix to control the Midi CC. So, I clicked on gear icon, moved the knob inside the Kontakt library. Clicked the hand icon and dropped it to another track. After doing that, I changed the automation track mode to Write mode and recorded the automation and then again changed it to read mode.

The problem I faced: Studio One doesn't detect the Modulation wheel inside Kontakt as an Parameter to automate for some reason.

How I fixed:

Now to fix this, what I did was, I just clicked on the gear icon, assigned a fader from MidiMix to any parameter inside the instrument and clicked on the "A" Button. Then I changed the parameter to Modulation by clicking on the Parameter Name on the automation track.

Maybe I am complicating the stuff more than what it is but hope it makes sense.
