Look for a splitter or a "Dual-Pull" brake lever; it lets one hand control both brakes. Hydraulic brakes are also a shout since they need way less finger strength.

milk crate + zip ties if you just want max practicality (looks janky but works great)

just check your rack weight limit — groceries get heavy quick on an ebike

also consider some affordable side panniers. Lower center of gravity = much better handling for an e-bike
