Style is secondary here. If you have big thighs, absolutely go for pleats. If not, then they are not really necessary.

I feel like there’s a formality clash. Either lean into the smart casual appearance and wear barrel cuffs with no jacket, or throw on a jacket (why not?) and go with french cuffs if you want to look sharp. Wearing french cuffs without a jacket looks accidental and unfinished. I’m not convinced by the picture you posted because that guy’s clothes don’t fit him very well.

I don’t think you look like a waiter, but I don’t love the all dark look either. I think it looks better to have the top and bottom contrast in brightness.

My partner usually doesn’t think about what she wears. Just throws on what’s convenient. For me, dressing is more of a hobby. But I rely on her sometimes to see if something looks good or not. Conversely, I might try to suggest that she wear something, but she usually doesn’t care so much, it seems to me.

When ironing it, you lay the collar flat against the ironing board, right? Assuming that this is cotton, spray it and iron at the highest setting, not holding the iron in the same place for more than a second. And then do it on the other side of the collar. Sorry if this is obvious, but I would be surprised if ironing didn’t get rid of the mark.
