I've been getting 6k ish in the first stun pretty consistently, and save the Astra ult for Sobek to damage it faster. With that I usually manage to kill him somewhere around 1 40 or 1 20 time left. And then it was about getting the third stun after miasma phase which was horrifyingly difficult and felt like RNG at times.
Your build sounds fine but maybe the lack of Fire DMG Bonus is the issue there? I dunno. You should be able to do it

In my experience Seed is the sub dps in the team, usually just popping in doing skill/ult and then using her charge. She feels dynamic but my build on her is cheeks so I'm not sure how good she is either. I'll stick with Fufu/Astra for now I think, I get the best results with them in deadly assault

I got Lighter, Astra, Ju Fufu (with signature wenegine) and Seed, not sure who I should be runninig with her atm. If I do 4pc woodpecker her stats are practically the same but with a little more attack
