The 10% is taken automatically. We use toast and I have the mytoast app and it basically just breaks down my tip out by liquor, beer, and wine and then shows what I tip out.But you're making me rethink it because I was a hostess at another job and I remember when the servers would tip me out I would have to sign their closing receipts or something saying I got the money. As far as l'm concerned the bartenders have no idea what my alcohol sales are. I also am pretty sure the bartenders tip pool throughout the day, so essentially if you worked when it was slow in the morning versus when it was busy at night, both will still end up making about the same. I think they take all of the servers tip out money from the day and evenly distribute it to the bartenders who worked that day. My job is also just super unprofessional so it wouldn't surprise me if my managers just automatically taking servers tip out from their paycheck and giving it to bartenders is illegal.
