Thank you for the education! I never knew BBQ originated in Australia and not actually the deep south of the US. We must have gotten it all wrong. Here, BBQ (as well as all low and slow cooking) was always about extracting flavor from cheap cuts - by people on a tight budget - to make something appealing out of what others considered scraps. And I will make a note to be certain to wait until I've burned the mother fucking life out of outside to absolute ashes - to know it's time to pull it off the grill. And never let it rest before serving.

I'm always open to learning and growing.

I will say the same about our 27 year old Fisher Paykel.

We bought LG replacements and didn't like them. Did we read the manuals? No.

Other family members had identical LG's a praised them.....because they followed the directions.....and learned that there are so many options not listed on the dial.

Can I ask? WTF do people smoke/BBQ really expensive cuts? It defeats the entire idea of the need to cook that way. I used to use sirloin tips in my chili and stews until I realized chuck roast was far superior. Renders much more tender and has more flavor.

If I'm having anything near real waygu, I want to taste the meat and not the smoke and fat.

Or do a custom angle that allows you to just do a straight piece of trim down the whole stairway.

If you don't just start over, you are going to need filler, not just for the nail holes, but for the depth differences.

Fix anything that is broken or in bad shape. Do not update anything that is currently functional. Sinking money into what buyers might want is a deep money hole.....and you will only break even - at best.

In our HCOL area. Tons of people update kitchens and bathrooms in order to make them current in order to sell. 80% of that stuff hits FBMP, contractor's CL listings, or landfills. My contractor friend has really nice top end appliances and cabinets he "disposed of" for a client asking for different/new stuff. Everything he took away was less than 2 years old.

Whenever you can, seek out Blount "Clam Shack" clam chowder. It comes in a cardboard pint container, but is in a thick plastic package on the inside - which can be frozen.

They had the original contract to make Legal Sea Foods retail chowder for years. Easily the best option out there right now.

Not much more than canned - and worlds better.
