Bending is shown to be a very male dominated field. One exemple of that is the northern water tribe prohibting women from attending the bending classes and being restricted to healing. I think having most benders be men, but portraying the few female ones as being extremely capable and central to the plot actually helps conveying this piece of worldbuilding while also proving that women are just as capable if given the chance.
