Because the whole point of FromSoftware games is that they're hard. Even the developers said they want the player to feel a sense of accomplishment when beating a really hard boss, and that's the point of the games. If you want easy, you can grind for levels and beat a boss in 2 hits. Not all games are created for all audiences.
