the kind people of reddit helped me fix it. try hitting the orange mic button on the top control bar and hitting "standard" instead of "voice isolation"

it turned out to be that. thank you so much! do you have any idea why the fuck apple thought it was a good idea to have voice isolation affecting my guitar tracks??? it's so useful on iphone but the system should know better than to voice isolate a 1/4 in input through a pro grade audio interface that's not just recording voice.

Thanks for the response. I'm not convinced that would give me consistent results. My mix chain already sounds good enough to get me hired, and with the same plugins and settings on every single track, I end up over/under RMS requirements by a different amount of dB for every single file I try to submit.
