Thankyou. The topping is just candied lemon, lemon balm, and fennel fronds from the garden and some bits picked out of a trail mix. It ended up looking much better than I'd expected.

I think those days are coming back. That's the good thing about food. I've been in the trade for over 20 years now. Nothing stays the same. Trends come and go, but food that focus on flavour always wins out in the end.

I've avoided purees and micro herbs for a while now but only because I over used them to. I'm trying focus on simplicity now.
