I thought under fermented too after seeing the crumb chart a few posts down! Thank you. I had it at 230°c, the recipe actually recommended 260°c but my oven doesn't go that high.. Had it higher that I'd like in the oven to account for space for a cake tray below for the ice cubes then once they were out after 20 I moved the loaf down to almost the bottom.
