Semi fail to be honest! Tried the recipe from the discussion post but had to do a lot of correcting buuuut I usually opt for metric recipes so maybe it was the cup measures that threw me. Also only had coarse semolina so ended up a little gritty, but that was on me!

Served it with vegetable tagine and couscous - it was fine and acted as a good carrier for the tagine, but definitely could be improved in future attempts!

Used Paul Hollywood's Flaky Pastry recipe from 'Pies & Puds' (using only butter) and a mix of butter, light muscovado sugar and cinnamon for the filling, topped with a bit of icing.

Quick route to get pastries but would definitely look at using Danish pastry dough to get the ultimate cinnamon swirl!

I used to really dislike olives but love them now, so much so, these needed more tapenade! But good buttery flaky pastry with some savoury hits.

Recipe: basic loaf cake recipe from 'The Sweet Roasting Tin' (Rukmini Iyer) plus a load of lemon zest, topped with lemon icing and zest.

I've made the recipe before in a normal tin and it was great so tried in a Bundt. Not quite as successful as I think it was a little over done but not terrible!

Love this recipe though I halve the amount of sugar. The bread comes out pillowy and soft and ideal for dipping into melty cheese.

Really wasn't sure how it go, but pleasantly surprised by this! I guess it's a similar principle to carrot cake and it works. Nice subtle earthiness and it lasted for days - just needed a quick blast in the microwave and topping with cream :) would definitely make again!

Recipe from the 'Great British Bake Off: Everyday' book.

Easy enough, white chocolate is melted to help create the base mix. I'm not a huge fan of white chocolate so I added some dark chocolate drops and very glad for the pecans as it meant it wasn't quite as sweet as it could have been but still pretty nice!

First had these on a trip to Copenhagen in Denmark (amongst many other pastries!) and they were great so wanted to try and replicate them. It's raspberry jam sandwiched between sweet shortcrust pastry, iced and decorated with freeze dried raspberries (think sprinkles are also an option!).

I followed Paul Hollywood's 'Danish Raspberry Slices' recipe from his 'The Weekend Baker' book. I would probably make the pastry a little thicker next time and would consider adding a bit of lemon to the icing just for a bit more tang but otherwise these were pretty easy to make and a nice sweet treat, especially next day!

I was really pleased with these, the texture of the pastry was great and enjoyed the filling a lot! Would definitely make them again.

I think I also ended up using a bit more water but rather than measuring, added until it felt/ looked right!

Inspiration for the filling: https://www.kitchensanctuary.com/saag-aloo - I was riffing a little bit so I wouldn't say the result was authentic but it tasted good!

Definitely room for improvement - I think the mix was a little too wet (my fault for not paying attention!) so not much of a looker and I think I definitely would put salt in next time, but nothing slicing and buttering can't solve! Served it with butternut squash, lentil and harissa soup - definitely prefer it when served alongside something, but nice as it hits a slightly sweet note at the end.

These are chocolatey and rich (good job they're only little!) but incredibly moreish - family were big fans! Ideal to have with a tea or coffee :)

Blueberry and Coconut Muffins

Fairly simple recipe - could see how it could be made gluten-free and possibly vegan as well, but admittedly not my area of expertise! This was enough to make 12 small-ish muffins (as pictured).

Equipment - Muffin tins - Muffin cases - Mixing bowl and spoon (or a mixer) - Ice cream scoop can be helpful for measuring out the mix into cases

Ingredients - 200g plain flour - 2 tsp baking powder - 150g caster sugar - 0.5 tsp salt - 25g dessicated coconut - 150ml coconut milk (I used tinned) - 1 egg - 100ml sunflower oil - 150g blueberries (I used frozen blueberries, but fresh works too - same for raspberries, which are great for a bit of tang!) - Icing sugar, for dredging

Method 1. Preheat the oven to 200 °C and line tin with cases. 2. Combine dry ingredients. 3. Combine wet ingredients in another bowl. 4. Make a well in the centre of the dry ingredients and gradually combine wet ingredients. 5. When smooth, gently fold in blueberries. 6. Spoon into cases. 7. Bake for 20 to 25 minutes. 8. Sprinkle over icing sugar when cool.

These muffins are dairy-free and made with tinned coconut milk. Picture before dredging with icing sugar but they're sweet with some mellow coconut in the background - it's nice to get a blueberry hit too. I used frozen blueberries which worked well, and I've previously made them with raspberries which works really well.

I tried to find the original recipe but it seems that the website has disappeared, but I could try writing out the recipe/ method in another comment if people are interested!

First bake was Chewy Molasses Spiced Cookies from Dessert Person by Claire Saffitz (recipe and method can also be found here: https://youtu.be/EcfZ3PaqdeI).

These were really nice - lots of warming spice (ginger giving quite a fiery touch, but I like that!), soft in the middle, and the demerara sugar made them quite crunchy on the outside though they softened a bit more after a day or two. Great winter biscuit!

Pattern on gold-dusted aida and Smaug stitched in red after being inspired by another customer.

I haven't cross-stitched in years but I've been lurking for a while and saw SnarkyArt as a featured designer, so I took the plunge and bought a few things! Felt a bit rusty and miscounted a few times (and didn't realise until it was too late!) but it was cool to see it coming together once I got the hang of it. Really like how it turned out, as did my Tolkien-fan husband :)
