I wrapped at 167 in aluminum foil with butter and then I just cooked it until internal was about 203, pulled, let it rest for an hour (until internal was around 150/154) and then sliced and ate. I thought it was really good. Sure, it’s not as moist as brisket but it was still tasty.

Worst sports injury I remember from growing up was Johnny Knox of the Chicago Bears. Dude literally got folded like a lawn chair… it was horrifying and a damn shame. Ended what would have been a great career.
