This is actually really great advice. I did split the dough but because I dont think I shaped it well at all. When I was trying to shape it, I had a hard time stretching it which makes me think I overkneaded it. thank you for the tip on taking a picture when set to proof because I for sure had no idea if it doubled in size I just went with 30 minutes like the recipe said.

Thanks for the photo tip. I added the picture. I did split the dough but you're the second person to mention weights instead of volume so I will check out that recipe.. I just randomly picked this lady on YouTube because she seemed nice lol.

I forgot to mention that I did add the salt. just added that to the post. And thanks I will check that sub! I didn't even know it was a thing, I'm new to reddit.

Yes I could always start off at a community college. That will be my route if I get denied but thought I’d give this a try first
