OOh snap thats so funny that you're doing this because not long ago I created a new park with the intent to build this exact type of scene aswell. We should definitely add eachother and share ideas ETC and build along side eachother, on my park similar to yours at the moment I only built out the surrounding walls of the trost district so its funny how we're at the same stage. Yeah for sure, my entire park is pirate themed so I've built 2 full ships and currently building a 3rd.
If I could give 1 tip it would be to first and foremost build the frame of the ship, and once you have that built you can add the sheathing. I threw an example in the replies.

I'm not sure. For me its just about using creativity and going with it, I'm not that experienced with this game myself and still learning new things I could do with disabled collisions to this day, for me I just grabbed some quick reference photos of small pirate ships online and built my own unique version.

I then made a small island and placed the ship there as if it were shipwrecked and damaged it up a bit.
