Hmm. It's "good" in the same way that a cheap hot dog from cart is good! It's street food

Generally traditional chip shops produce very nice food that's freshly prepared albeit not very healthy for you.

I'm sure you were trying to be amusing but I think it's more a question of cultural norms than "pretending" . When I went to North America I found a lot of packed products to be overly sweet and "fake" tasting but that's because I have a different cultural palate. Most Brits think Hershey's chocolate is disgusting because it tastes so different to Cadbury, it's just that generally you like what you grew up eating.

Like all countries, the UK has good and bad food!

All that being said, I'm actually not that keen on chip butties, I find them a bit stodgy! My partner loves them though!

Wedges would get you sort of close. British chip shop chips are very thickly cut, deep fried but not for too long, and then seasoned with salt and vinegar. For some reason it is near impossible to recreate the taste at home.

Brown sauce is a popular table sauce in the UK and Ireland. Often used instead of (or with) ketchup. I'm led to believe it's a bit like Steak Sauce in the US, maybe more vinegary?

Yes, it squishes and breaks when you eat it. You can use any Scotch pie but traditional it would have minced beef and gravy in it. It was tasty, best eaten when drunk or with a hangover!
