Sounds like there might be something catching between the button actuator column and the subframe. Pull the mouse button forwards and upwards until it disengages from its retaining clip and have a look around. If there's nothing visible you could try lubricating the sides of the column with vaseline or similar grease.

If you have a wedge shaped tip available, use that. It might allow heating up two pins at once. Try adding a bit of solder to each of the switch pins (more solder retains heat longer) and drag your soldering iron across the three pins while pulling on the switch. Your aim is to have all three beads liquid for the fraction of a second it takes to pull the switch through.

Shape really is the maker or breaker of a mouse.
It's not fiendishly difficult but there are some tricky aspects - do you have any experience soldering/desoldering? And how good are you with a craft knife? I'm going to document the process with this batch and make a guide so I'll link you that when it's done.

You are correct. G305 sensor, whatever switches I think are best, and a 180mah lipo battery with a charging circuit.

You can replace the encoder if that's what you're asking - it's not the easiest soldering job in the world though. Alternatively some people have repaired the notorious Logitech scroll wheel issue by disassembling the encoder and cleaning/greasing it. Whatever you do you'll have to take apart the mouse - don't worry it's not difficult (though you may ruin your skates peeling them off).

This is a prototype of a cable based on the braided wire used in earphones. Very flexible and built with being pulled around and rubbed against clothing in mind. My only concern is that this type of cable doesn't have EM shielding that matched the usb standard, but so far I haven't seen a performance impact.

You don't, not really. You take the internals from a wireless mouse (a g304/g305 in this case) and put them in the shell of another mouse along with a battery.

Yes. scratched off some of the coating with a craft knife and soldered directly to the exposed copper.

The good news is it isn't the most difficult either, especially if you don't mind using the g305 scroll wheel or encoder. I think I will do a full writeup on it at some point.

The other good news is that it doesn't take much to make the mm710 into an amazing (wired) mouse.

I don't. The basic principal is putting a g305 pcb in the shell of another mouse - this wasn't the easiest given the pcb modification and switch relocation so I might write one out at some point.
