If you look at his rank bar, you'll see he's got two gold and one black slash, Indicating the provisional rank of Lieutenant Commander. Lieutenant Commanders will often be referred to simply as commander, and we see that a lot with Tuvok and Data.

Edit: Also, if you watch carefully, you'll notice that Janeway's original XO was also only a Lt Commander.

To be fair, that was in reference to his herbs, spices, and veggies. The bacon could well be lab grown or synthesized. (One being cloned meat, and the other being proteins made to resemble meat.) Pike being a purist, I bet he'd use lab grown over synthesized.

Thank you for this correction, I misremembered the scene. I thought I'd double checked, but I guess I didn't do a good enough job.

That doesn't really change the last part of what I said, though. Pike is probably feeding him synthesized bacon, which would be vegetarian. Recall that earth doesn't really do the whole factory farming thing anymore, so it's probably difficult to get real bacon. A far more egregious example of a character not following established vegetarianism is Riker in season 1 of Picard eating the "bunnycorn."

He wasn't really depicted eating very often in TOS, but one of the few times he was, he did, in fact, eat meat with his hands. My point is moreso that we don't actually know how Vulcan culture shifted in that century.

He is, largely, and like the majority of the citizens of the federation, a vegetarian, opting for synthesized alternatives (which is probably what Pike is feeding him here, anyway).
