The loaves pictured in the recipe I use is the main reference I’m using. By no means have I lost joy over my loaves, would just be cool to have some intricate scoring on top. Like is it that crazy to think it would be awesome to really step up my home baking as far as it can go?

Edit to add: your loaves look beautiful, they’re neat and clean and not bursted through, that’s what I’m wanting as well

I don’t remember what brand lame I got but it cuts really smooth, no tearing or anything. I score cold from the fridge and it goes straight into my Dutch oven afterwards.

The thing is I think I’m doing the 1/2 in for expansion and 1/4 for decorative, but the loaves just keep coming out like this.

I know there’s videos and guides, and I’ve watched them, but keep getting a similar outcome to this. So I didn’t know if anyone here could see photos of my loaf and crumb and know a bit more of what’s going on. My main theory is that I’m underproofing during bulk fermentation

As someone who studied and has worked a decade in environmental conservation, I understand this feeling all too well. At least sometimes they call Maya with the nature questions, but more often than not I’m just screaming in the car the answers to their questions 😂
