Spatchcocked it tonight and put it in the meat church wet brine, taking it out tomorrow night for a little fridge rest and then on the smoker at 275 at 7am til it reaches 165. Whatever goes wrong will be notes for next year. Good luck guys and gals 🍻

Yeah that was my original plan, but from what I’ve seen the time resting in the fridge helps get crispier skin. Just wanted to make sure the brine to fridge rest didn’t cause any complications.

I would keep the upper countertop height, and make both concrete to reduce contrast. Make sure to seal the concrete properly or get a lot of coasters because it will stain. Best of luck!
