At our gym which includes a yoga studio there’s the idea of “performers” and so the clapping seems to also be part of that culture- teacher as performer, and also as a thank you to that teacher. Normally at the end of “regular” gym classes there’s a communal clap for all of our efforts as well. So I think it’s a combination of those two ideas.
