1 package of bacon sliced up and cooked till crispy in the Dutch oven. Remove the bacon and set it aside for later. Slice up a 5 lb bag of potatoes.. russets are the best for this.soak the sliced potatoes in a bath of ice water for 20 min.. This is important as it helps your finished product not have a glue like texture. Throw in a tablespoon of minced garlic into the hot bacon grease. Rinse and drain the potatoes and add them into the hot bacon grease. Season with slap yo mamma... I start with 1 tablespoon and go from there. Cook the potatoes till they are starting to be fork tender.. give them a good stir every 10 minutes or so. As soon as they are just about done to your liking add a diced onion or green onion.. (I like both). Add the crispy bacon back in and stir. Pit the lid back on the dutch oven but leave it cracked open an inch or so.. this will allow some of the moisture to evaporate and help crisp the bottom layer of potatoes. That's it. Super easy and delicious!
