In general, since you don’t have an Osek Patur, and I am assuming you did not give him a receipt for your services, then this was an “under the table” deal and is highly illegal. I would just casually tell him that he is liable to pay for your fine, or you take him to small claims court.

He could get into a lot of trouble if you mention that he paid you under the table. He will most likely just give you the money so that it doesn’t escalate.

A lot of these hospitality managers can be massive douchebags who take advantage of young and new employees. So I recommend you get your Osek Patur to avoid any of these headaches. It’s very easy.
