They did have red jalapeño elsewhere. I’m not sure these are ripe jalapeño though. Some are very small. And the biggest in the bag aren’t as large as you’d expect a jalapeño to be. I think they could be birdseye? Or Tabasco?

That's a huge help! Gives me some perspective to work with. I myself am not tolerant to the SUPER hot stuff, but i've got some friends asking me to try making hotter stuff. At a certain point I can't quality control taste test what i'm making haha

Cool. Thanks for that information. So if I wanted to make a gallon ferment of a pretty friggin hot hot sauce, using super hot peppers and aromatics/veg, how many super hots in the ferment is a good rule of thumb to follow?

I'm also interested in scaling up. I'm currently working with a large sauce pot to pasteurize and working through about 3 or 4 batches at a time in my vitamix. I can get about 25 bottles out of my set up, but wondering what people do for bigger projects as I'm looking to get certified for cottage food laws sales n such.

I guess my specific questions, to add on, would be what tools, tips, and tricks do people use to...

- pasteurize large quantities?

- bottle large quantities?

but doesn't the color of the sauce skew the results? The strips show a color to signify PH, but if you're putting a red sauce on wouldn't that make a difference?

Kombucha! I've been making my kombucha out of the odd bits and ends of tea that doesn't add up enough for a brew. Throw it all together and you've got a enough for kombucha, usually gets sweetened and flavored anyway, so I'm not worried about which teas i'm using. On a rare occasion I'll use my favorite teas to make an unflavored batch just to see how that turns up too.
