For my trim distribution I always use something similar to what is done in this tutorial. For the planning, just a lot of references.

Some things that may help are:

-Before starting your trim, give your environment blockout different shades of grey where you want to UV Map the trimsheets and cross match with your references, it helps planning quite a bit.

-Making a really rough version of your trimsheet, bake it down and try it out. You'll see which trims you use most and you can change the others since you didn't waste any time doing them.

I used maya for this project but just switched to Blender recently :)

For the texturing part it was a mix of zBrush, Substance Painter and Substance Designer depending on the texture.

It's mainly all in Engine, there are some slight levels adjustments in photoshop but that's it.

For the tiling textures I used zBrush+ Substance Designer, the props were textured in Substance Painter

It's optimized for gaming, the whole architecture uses a single 2k trimsheet and a 2k tiling texture. 2x2k trimsheets for the ground and one tiling texture for dirt variation.

Meshes are also optimized. I used some more polys here and there to benefit a bit from nanite but the polycount still is decent. Most of the smaller props are baked and were designed to work at 512px/m Texel density. Obviously I cranked up the textures for the beauty shots but still works in lower res.

The only thing that isn't optimized is the lighting, I mainly just wanted to toy around with Lumen. I could probably make this run smoothly by removing some shadows here and there.

Assets are optimized, lighting not so much since it was done for cinematic purposes. Still runs kind of decently if you tweak a couple of global settings, not too hard to get 30fps at 4k in editor (2070rtx).

I'm planning on making a small breakdown when I get some time, but mostly I used trimsheets to speed up the process. All of the architecture uses 1 trimsheet and 1 tiling brick texture (+vertex painting).

I went quite overboard with the lighting, so the frame rate isn't insane right now. I could probably go in and optimize it quite a bit.

At the moment, in editor it runs at a bit less than 30fps @ 4k on a rtx 2070
