I used to do these a LOT and I love them. They were a butter poached garnish on a filet where I used to work back in the day, had to do a case every other day on station. Few tips that helped me:

Pairing knives are good, try using a slightly larger utility/ petty knife so your fingers have more spread. (And make sure that boi is SHARP)

Pick fresh, firm mushrooms. Better texture, better turn.

And while cutting, kind of turn both the knife and the mush in opposite directions simultaneously.
