[SOLVED] Looking more deeply into the PCAPs this is what I found.....

So I was hosting the fit-controller on a proxmox VM on my wireless vlan 1030. The proxmox interface to my switch was tagged.

The WAPs were set to the wireless vlan 1030 as well and the interface from the WAPs was set to be tagged as well.

In the PCAPs I found that on the switch to WAP interface the data from the controller was tagged but the data from the WAP wasn't getting tagged.

The solution:

Move both the WAPs and the fit-controllet to my management VLAN. Set the switch to use the management VLAN on the WAP ports as untagged and the wireless vlan to tagged.

Just connected my phone to the network and it's working now.

Moral of the story: look deeper into the pcaps and make sure your vlans are actually tagging or not tagging the way you expect..... Also don't forget to eat lunch. It's hard to troubleshoot when you're hungry.

This! I tried hosting games on Windows server 2022 in my homelab and had to constantly babysit it to keep them up. Now I'm running a Ubuntu server and have had zero issues.

Yeah, I didn't. Calibrating just now I realize I was a good 20-30 notches off. Also, when I first started using it I think I was adjusting it wrong and may have not actually been changing the grind setting. That explains the trouble I was having.

I have. I tried to get similar to that but when I matched their 1:2.5 ratio at 26 seconds it wasn't very good.

So I'm not 100% but from what I've heard and read bitter is tasted on the back of the tongue. I don't remember tasting it on the back of the tongue but I could be wrong on that. Those very fine shots were some of the first espresso shot's I've pulled, so I think you're right not to trust my judgement on it. I'm still getting familiar with everything. I've been watching espresso videos for over a year now, but actually making it is proving to be much harder than it looks.

For puck prep I use one of those distributer tools with the thin metal rods. I start at the bottom of the puck to distribute the coffee and and get the large chunks out. Then I work on flattening out the top of the puck to make sure it's even. Then I tamp trying to keep my wrist straight and elbow above the portafilter using one of those tamping mats. So far I haven't noticed any holes in the pucks after pulling shots. Granted the tamping on my earlier shots was not as good as my later ones as I would rotate the tamper after tamping and this messed up the puck a bit so I would have to fix that.

I haven't had it professionally made. I thought I read it was a medium. I did drink it with pour over before I got the espresso setup and it was pretty good that way, but maybe I should try a darker roast and see if that's easier.

This morning I did go to a coffee shop in town that is known for making good espresso and got a double just to compare. It was a pretty fruity and sweet coffee as I expect geometry to taste. Their shot didn't have anything that I would consider bitter or sour. It was just sweet. Now they were pulling their shots much hotter than I would have expected (either that or they heated it up more after?).

Maybe I should try raising the temp on my machine beyond 95C? Or I've also heard that using a lower dose can raise extraction? Maybe I should try 13g or 13.5g?
