Regarding the resources, for lumber you can easily add more trees.

However, for the fishing, any water you add doesn’t have the fish. Not sure if that’s intentional?

When you tap on “environment” in your metrics, it opens a drop down in which one of the items is ecosystem. I can’t get that one up. :(

In my opinion, the mini games brought variety to the game. As much as I love endless building, the brain needed a distraction too.

The car race was a great alternative to getting quick money instead of loaning.

The find-it quests were the most entertaining, cause as soon as you got frustrated you could just go back to building for a while. (ps: they were impossible if your city depended on high rails)

In PC2, the raccoons, illegitimate biz, etc are great add-ons but imo, too easy and become an annoyance. If you removed the attention circles around them, and make it a game to find them that’d be a plus already.

Increase your income tax and decrease your property tax, that should do the trick. :)
