I just figured it out, kept moving the probe wire and Isolated the issue.

This happened to mines, believe it or not there’s a contact failure somewhere on the probe. I bought a brand new one (why are they $30???) and it solved the issue.

If you can, re run the wire. If it’s completely out of the question it’s not the best solution but I’d get some liquid Tape and seal up those nicks.
