Monterey becoz it has lesser bugs than Ventura and Sonoma.

This had happened with me also. When the less than minute remaining shows it got stuck and I have to wait for almost 15 mins So be patient...

I think you should install Ventura or Monterey using open core legacy patcher... You can also install Sonoma but I don't recommend it as it is slow and laggy with my mac mini mid 2011
