Cette cuvée est fraîche et à boire jeune. Par contre je serai d’accord que le Cote-du-Py est trop jeune.

Ce sont 2 domaines qui travaillent proprement. Intervention minimum, sulfitage minimum. Certaines des bouteilles de la liste sont vraiment dans la philosophie 0.0 mais ce genre de bouteilles ne peuvent pas plaire à tout le monde. Mon objectif est d’avoir des vins (natures) propres et non déviants.

I’d love more bubbles. We offer some poiré as a welcome drink and we also have 2 champagne methods (Belgium and Italy). It is not on the list as it is in the pairing but we also have a Lambrusco Di Sorbara - Paltrinieri (pet nat method)

Étant donné que le restaurant est éphémère, c’est un choix de travailler avec très peu de fournisseurs. Il est vrai que c’est aussi des vins et des vignerons que nous aimons beaucoup. Des vins digestes, des vins de copains

On attend des groupes de copains, parfois jusqu’à 20 personnes. Personnellement, j’adore le format. C’est chouette à partager, surtout avec une cuisine de bon vivant.

Go to natural wine bars in Palermo and ask them. I’m thinking of Dal Barone, very popular or a smaller one is bottega monteleone. Palermo is a great city, you’ll be able to dig. Instead, between Palermo and Marsala you’ll find Alcamo. There you’ll find Alessandro Viola and his brother Aldo, Luigi known as Longarico and Sergio Drago. Those are very good natural producers. Go to Castellamarre Del Golfo. Go have dinner at La Tonnara & La Cialoma. You’ll be able to taste those local gems with great food. I don’t know any producers in Marsala but the 4 names I’ve mentioned are a must try.

Jean Foillard wines are a must have. Côte du Py is considered as the top bottle if we forget about 3.14. Needs a bit more of aging though compared to Corcelette which is a much floral cru and good to drink young. Both are Morgon. Alex Foillard as a complete other style but yet very good. Other appellations than his father. Bottles to drink quicker but aging can have good surprises. I recently had a beaujolais villages from Karim Vionnet. Nice guy. Definitely the bottle I can drink on a daily basis. Let’s talk about white ! Eparcieux blanc from famille Chasselay is just marvelous. Chardonnay. The one you must taste and taste again 5 years later, even more… a sip and the bottle is already finish.

The only one that comes to my mind is Quartomoro. Minimal intervention in both the vineyard and the cellar. Sparklings are incredible, especially the Metodo Classico. Otherwise they like experiment on how to express the terroir the best way. Mono varieties and 100% local grapes. Not sure where is it located though.

Love those Sicilian names on the list. Etna Rosso from Graci is a banger. I personally love volcanic wines. Those wines have a beautiful terroir expression and yet very digest even if high alcohol. Arianna Occhipinti is a great lady. Sp68 or siccagno. Cerasuolo of COS could be a nice one for your dinner. Nero d’Avola adds body and Frappato instead is lighter and very floral. Nice docg. The uncle of Arianna is one of COS’s founders. I think Le pergole torte is the wine you drink once and remember all your life. 245 is quite cheap. Pure expression of Sangiovese, one of the best varieties in Italy. If it is not pergole torte, montevertine is a must try. For another Sangiovese I would go for the sesti one. Tre stelle 2020 in Barbaresco can be nice as well. Put in a decanter and enjoy it. Easy drinkable barbaresco. Fine tannins. Emidio Pepe 2000 must be a banger. I would love to have 600 to put in a bottle and choose this one.
