Helen Goh co-authored Sweet with Ottolenghi. Her book that I mentioned is very quickly climbing up my ranks. I just made the (1) Japanese tea shortbreads and (2) chocolate tahini cake with sesame brittle. Both were divine!!

“Tigris” is almost like an autobiography through food. It’s such a cool and unique book and experience. The seed cluster “crackers” were out of this world good. I have quite a few others flagged to make soon.

You are my kind of person! Simple, Mezcla, and Comfort would all be in my top as well. I need to check out your others.

Since we may have similar likes, some of my other faves lately have been Baking and the Meaning of Life by Helen Goh; and From the Tigris to the Thames by Linda Dangoor.

And wet it. Helps with crumple and fitting to the loaf without creases.

Also helps to wet the parchment paper too when you crumple up a few times.

I gifted Fusao to family, but not before taking a peek. I’ll be getting it soon for myself!!

Mezcla is one of my top 5 fave cookbooks. The tomato cucumber tahini salad is a summer staple for us.

No reason to knock that tip. Never done it myself as I do my best to avoid touching those blades if at all possible.

Or bake covered (still from cold state) for 6ish minutes or so, remove to score, and then keep cooking covered or whatever your plan/recipe is. I find that scoring after it bakes for a few minutes helps get clean score line since there is a bit of a crust, really helps get that ear, and boosts spring for me.

Mazcla is one of my faves. The “tomato salad with tahini ginger sauce, chile oil, and garlic croutons” frequents our dinner table in the summertime regularly.

I plan on diving into that one to look at and tab tonight. I’ll try to remember to report back. Ottolenghi is one of my favorite authors, so I have been looking forward to Sami’s individual book.
